Not all fat is bad for you, categorised into two groups saturated and unsaturated the difference between the two is the number of double bonds in the fatty acid chain. A double bond in the structure of a saturated fat doesn’t exist, while in unsaturated fat there is at least one double bond in the chain. Unsaturated fats can be further characterised as monounsaturated or polyunsaturated. Monounsaturated fats contain only one double bond in their formation, while polyunsaturated fats contain two or more double bonds.
